There are numerous recipes available for appetizers, soups, salads, main dishes, side dishes, and scrumptious desserts that entice and satisfy our inner foodie! We all love food and eating delicious meals, even when trying to eat healthy. Food is indeed an enjoyable part of our daily lives.

 

With fall in the air, we start thinking Halloween, Thanksgiving, and Christmas holidays. The weather cools, fall colors of yellow and orange appear on trees and in stores, and great food is on our mind. As most of us begin to attend many autumn events where food is involved, either by potluck or a one host serving style, the opportunity to cook and eat festive food heightens. If you are invited to an event and asked to bring a dish, why not start thinking appetizing fall food dishes in holiday colors? 

 

 

3 Delicious Fall Recipes to Bring to Your Next Event:

 

 

Chicken and Rice Feast – For a simple entree that is easy to make and loved by even the pickiest of eaters, a chicken and rice dish works every time.

Ingredients:

2 cups white rice

1 large onion, chopped

2 cups chicken broth

2 10.5 oz. cans cream of mushroom soup

Salt

Freshly ground black pepper

3 large bone, skin on chicken thighs

2 tbsp. butter, melted

2 tsp. fresh thyme

1 clove garlic, finely minced

1 tbsp. chopped parsley, for garnish

Directions:

  • Preheat oven to 350 degrees and grease a 9” x 13” baking dish with oil. Add rice, onion, broth, and soup. Stir until combined. Season with salt and pepper.
  • Place chicken thighs in rice mixture and brush with melted butter. Sprinkle with thyme and garlic and season with salt and pepper.
  • Cover dish with foil and bake for 1 hour. Uncover and bake for 30 minutes more, until the rice is cooked and the chicken is golden.
  • Garnish with pastry and serve.

 

Gourmet Sweet Potato Souffle – For a delicious side dish that fits in with the fall color orange, a gourmet sweet potato souffle will make everyone’s day.

Ingredients:

3 ½ pounds sweet potatoes, peeled and diced

½ cup butter, melted

¾ cup white sugar

1 cup heavy cream

5 eggs

¼ tsp. ground cloves

¼ tsp. ground nutmeg

½ tsp. ground cinnamon

1 tsp. vanilla extract

1 tsp. salt

Directions:

  • Bring a large pot of lightly salted water to a boil over medium-high heat. Add sweet potatoes, cover and cook until soft, about 10 minutes. Drain.
  • Preheat oven to 375 degrees. Lightly grease a 2-quart souffle dish. Sprinkle dish with 1 tbsp. white sugar, shaking dish to evenly coat the bottom and sides.
  • Place the sweet potatoes into the bowl of a food processor. Add butter, sugar, heavy cream, eggs, cloves, nutmeg, cinnamon, vanilla, and salt. Process until the mixture is smooth. Pour into prepared souffle dish.
  • Bake the sweet potato mixture in preheated oven for 20 minutes. Lower the oven temperature to 350 degrees.
  • Bake the sweet potato mixture until edges are slightly browned, about 40 minutes more.
  • Serve warm or at room temperature.

 

Pumpkin Pie – Mouthwatering pumpkin pie is a given for any fall dessert. Why not make this “always a win” pie from scratch and impress your guests? 

Ingredients:

1 15-ounce can pumpkin

1 14-ounce can sweetened condensed milk

1 tsp. ground cinnamon

½ tsp. ground ginger

½ tsp. ground nutmeg

½ tsp. salt

1 9-inch unbaked pie crust

Directions:

  • Preheat oven to 425 degrees. Whisk pumpkin, sweetened condensed milk, eggs, spices, and salt in medium bowl until smooth. Pour into crust and bake 15 minutes.
  • Reduce oven temperature to 350 degrees and continue baking 35 to 40 minutes, or until knife inserted 1 inch from crust comes out clean. 
  • If desired, garnish with yummy whipped cream or fruit.

 

No matter what events you are attending, or even if you’re dining at home, great tasting food is always a treat for your taste buds as well as nourishment for your body.
